Late last night, despite a calming cup of tea and meditation, my mind didn’t want to sleep. I have had a difficult couple of days after being in a stressful situation the other afternoon. I am lucky to have the friends and family that I do and they were able to help me sort out some of my thoughts. I am still trying to wind down while taking care of my body, mind, and spirit and trying to make sense of it all and channeling the energy to dissipate in the right directions. I took the opportunity to take a few things from my pantry and fridge, turn on some light music, and bake. The kitchen is my happy place and where most of my meditation happens. Putting your mind to rest doesn’t necessarily mean watching a show on television or scrolling through Instagram, sometimes it means using your energy and spirit to create something.
I have spent the past week product testing and although I do have some produce in my fridge, it’s looking a little scarce behind that door. I had some banana’s in the freezer and a couple of carrots left. I asked a few friends if they had any gluten free and vegan loaf recipes but didn’t get too much of a response. I took what I had and developed my own and it turned out great! The flavour and texture is so lovely, moist and dense at the same time. Next time, I am going to experiment using spelt or buckwheat flour (I didn’t have any on-hand). If you guys try it out with those, please let me know how it goes!
I went to bed feeling good and relaxed last night after making a few treats. This morning, I woke up slowly, stretched a little, and had a slice on banana bread with some homemade almond butter and bee pollen. I am still thinking through my thoughts, journaling, and taking the time to nurture my body. In times of stress, it’s important not to look for coping mechanisms and just try and relax and trust that your body is going to do the right thing while you help support it in doing so. During this time you should be trying not to eat heavy meals, drinking lots of water, avoid physical exhaustion at the gym, and assuring you’re in an environment you are comfortable with. I’m most comfortable in my bed with my cat and a nice banana loaf.
